Bioactive Constituents Present in Tilapia Fish (Oreochroumis niluticus) and its Potential Food Applications

ABSTRACT
Background: Tilapia fish is an abundant source of nutrients, yet it is underutilized than other fish species for human consumption. The aqueous fish muscle fraction of different fish species contain antioxidants that could be isolated in a muscle press juice and used as a food antioxidant for human consumption. Objective: In this study we made an attempt to measure antioxidant properties for muscle press juice extracted from tilapia fish. Materials and Methods: Proximate analysis, MRI imaging, and biochemical measurements were conducted to assess fat and protein contents, and fatty acids content of tilapia fish Results: The findings of this study provide evidence that the tilapia fish muscle extract is rich in antioxidants and acted as a potent free radical scavenger and provided protection against oxidative stress. Conclusion: Tilapia fish is rich in bioactive content which might represents a dietary source to enrich antioxidants intake among human subjects.
